It’s been a little while since my last post. Sorry for that! With the big move coming up and life happening time has gotten away from me. It will be worth the wait though I promise! I’ve got a great recipe for you that I merged from two amazing blogs! More on that later!
I’ve been doing paleo now for about a month after having successfully completing the Whole30 challenge. I love eating paleo and will never go back to eating the way I was before. Now I don’t eat paleo 100% of the time, that just doesn’t work for me, but I do try to eat paleo at least 85% or more of the time.
I have to say this is the best decision I’ve made because recently I got a glimpse at what I was putting my body through before I started eating this way. See what happened was late last week I came to work unprepared. I didn’t bring a lunch like I normally do and that was my first mistake. Being prepared is key to making the lifestyle of paleo work. It’s not hard either you just have to do it. Well I wasn’t prepared and by time I was able to grab lunch I was starving! My stomach was hurting so bad and nothing really sounded good. I though ‘oh I’ll just get a salad from California Pizza Company’ which was such a bad idea! What happened was I saw the appetizer for spinach artichoke dip and that was in I was done for. I convinced myself it was ok to have it since it had been so long and as long as I get a half salad with it I’ll be fine! That was my second mistake, thinking I could control myself. I couldn’t and I almost ate it all and barely touched my salad.
I felt so full afterwards and gross! The worst part happened the next day. The next day I felt so sick, my stomach cramping constantly and making me just feel like crap! I deserved it though, I ate the crap that I knew wouldn’t be good for me. The problem was it got worse throughout the day! By that evening I was having flu like symptoms such as my back aching, skin being sensitive to touch and getting waves of nausea every time I moved. I felt horrible! Luckily that next day I finally felt better but still had some nausea.
This experience has made me decide that it is not worth it to try the old crap I used to eat all the time. I was basically poisoning my body all the time! I’m amazed that I lived in constant pain everyday and never tried to fix it until a month ago. I truly was too, I was in pain everyday and just assumed that no one knew what was wrong with me. I had gone to doctors and they couldn’t find anything wrong. It’s amazing that on my own and with the help of CrossFit I was able to discover the Whole30 and the paleo lifestyle. If you have any stomach problems I urge you to do the Whole30 challenge and then follow a paleo lifestyle. Of just start eating paleo. You will be so thankful you did trust me!
Ok enough of that junk, lets get to the amazing recipe I promised! I used the recipe from Paleo on Main for the coffee cake but I left out the nuts. I used the icing from this recipe from Against All Grain to make my coffee cake! Against All Grain has a recipe for coffee cake too which I haven’t tried but I’m sure it’s amazing! I just thought this fit better with what I had on hand. Also, I saw on another blog some used almond meal instead of flour and it turned out and since I only have almond meal though I’d try this one. Plus I didn’t want to put apples in mine which I’m sure you can leave out from the other recipe.
Cinnamon Coffee Cake with Vanilla Cinnamon Icing!
Ok so here’s what you need!
- 1/2 cup Coconut Milk
- 2 Eggs
- 1/4 cup Raw Honey
- 1 tsp Vanilla
- 2 cup Almond Flour
- 1/2 cupArrowroot Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 2 Tbsp Cinnamon
- 1/4 cup Coconut Oil (or butter which I used)
- 3 Tbsp Honey
Here’s what you do!
Preheat oven to 325 degrees. In separate bowls, combine dry cake ingredients and wet cake ingredients. Pour wet into dry and stir to combine. Pour into palm shortening greased 8X8 dish or some size similar. Combine swirl ingredients and dollop onto cake and using a toothpick swirl around. Place in preheated oven and bake 25-30 minutes until a toothpick comes out clean. (I made some variations from the original which you’ll see if you read theirs)
Vanilla Cinnamon Icing
What you’ll need!
- 1 Tbsp Raw Honey
- 2 Tbsp Coconut Butter (also called coconut manna or creamed coconut)
- 2 Tbsp Coconut Milk
- 1 tsp Palm Shortening
- 1/8 tsp Cinnamon
- 1/2 tsp Vanilla Extract
What you need to do!
Mix together until smoothl. I put mine in the microwave for about 10 seconds to make it easier to mix. In the recipe from the link they suggest a mini food processor but I don’t have one so this worked for me.
